Portuguese style eggs
Ingredients:
- 5 pcs egg
- 3 pcs Tomato
- ½ pc Red onion
- 2 cloves Garlic
- 1 tbsp balsamic vinegar
- ½ tbsp ground cumin
- 1 tbsp muscovado sugar
- 40 gr Extra virgin olive oil
- 60 gr grated Parmesan cheese
- c / n Black pepper
- c / n Salt
Decoration:
- Chives
- Sour cream
Process:
- Cut the tomato, garlic and onion into slices. In a frying pan, place the onion and sauté, once the onion is translucent, add the garlic and tomato, until obtaining a type of sauce. Add cumin, balsamic vinegar and sugar. Remove from the heat.
- In a baking dish, pour the sauce and on top place the unbeaten egg pieces, then the grated Parmesan.
- Bake at 180º C for 35 min.
- Let cool for 10 minutes. Garnish with chives and cream to taste.
