Portuguese style eggs

Ingredients:

  • 5 pcs egg
  • 3 pcs Tomato
  • ½ pc Red onion
  • 2 cloves Garlic
  • 1 tbsp balsamic vinegar
  • ½ tbsp ground cumin
  • 1 tbsp muscovado sugar
  • 40 gr Extra virgin olive oil
  • 60 gr grated Parmesan cheese
  • c / n Black pepper
  • c / n Salt

Decoration:

  • Chives
  • Sour cream

Process:

  1. Cut the tomato, garlic and onion into slices. In a frying pan, place the onion and sauté, once the onion is translucent, add the garlic and tomato, until obtaining a type of sauce. Add cumin, balsamic vinegar and sugar. Remove from the heat.
  2. In a baking dish, pour the sauce and on top place the unbeaten egg pieces, then the grated Parmesan.
  3. Bake at 180º C for 35 min.
  4. Let cool for 10 minutes. Garnish with chives and cream to taste.
