Fried chicken

Ingredients:

  • 2 pcs chicken
  • 2 cups milk
  • 1 tbsp lemon juice
  • 2 tbsp Cayenne Pepper
  • 1 tbsp ground cinnamon
  • 2 tbsp Paprika
  • c / n Pepper
  • c / n Salt
  • c / n Oil for frying
  • 500 gr Flour
  • 150 gr cornstarch
  • 2 pcs Egg

For the coleslaw

  • ½ pc chopped cabbage
  • ½ pc Red cabbage, chopped
  • 1 tbsp dijon mustard
  • 1 tbsp Mayonnaise
  • 1 tbsp lemon juice
  • ½ cup apple cider vinegar
  • 2 tbsp raw sugar
  • 1 pc grated carrot
  • 1 tbsp honey
  • 1 tsp Garlic powder
  • 1 tsp onion powder

Process:

  1. In a bowl place milk, lemon juice, pepper, salt, paprika, ground cinnamon, cayenne pepper and mix. Place the chicken pieces, covering them with the buttermilk. Let marinate for 2 hours.
  2. In a pot, preheat the oil to 180º C.
  3. In a tray or refractory put flour, starch, paprika, cayenne pepper and salt, mix with a balloon whisk, to avoid lumps.
  4. Flour the chicken pieces and place in the oil to fry.
  5. Remove when a golden color is obtained and the interior has a temperature of 74º C.

Cabbage salad:

  1. Mix all the ingredients very well and season to taste.
